Healthy Delicious GF Banana Bread

Gluten-Free & Refined Sugar-Free – Inspired by the Healthy Chef

So simple to make – I literally throw everything into a blender, takes 5 minutes to make. Keep in fridge to store, you will need 5 bananas.

Step 1: Put the oven on 160 degrees – get a baking tin and line with baking paper (40-50 minutes in oven) Stick a knife or skewer to see if cooked

Step 2: 4 ripe bananas – chuck in a blender with 3 happy eggs (organic or free range)

Step 3: Add 1/4 cup or two tablespoons of Extra Virgin Olive Oil, 2 tablespoons of maple syrup or honey, 1 teaspoon of ground cinnamon, 2 teaspoons of GF baking powder, pinch of salt and blend it all up

Step 4: 250g or 2.5 cups of almond flour – blend it all up

Step 5: Spoon into the baking tin, slice one banana in half, and place on top to caramelise, sprinkle with ground cinnamon

Step 6: Eat it warm and fresh – Try not to eat the whole thing in one sitting 🙂
